Classic Breakfast Quesadilla

Make these Classic Breakfast Quesadillas part of your weekday wake-up with Dunkin' Donuts Iced Coffee!

Do you dream of the days where you can be on time for work and still eat breakfast? We do too. It's time we take back our breakfast!

No one can resist the taste (or smell) of a traditional breakfast complete with bacon and eggs but some days a sit down breakfast doesn't fit into our schedule. These Classic Breakfast Quesadillas can change all of that! With only five ingredients and capability to be frozen, all you need is a a half hour of prep time and you'll be eating a filling breakfast all week long!

Classic Breakfast Quesadilla Recipe

Makes 4 Quesadillas

INGREDIENTS:
-6 slices bacon, chopped 
-6 eggs salt and pepper, to taste 
-8 oz cheddar cheese, grated or sliced thin 
-8 medium size flour tortillas 
-Salsa, sour cream and guacamole, for serving, if desired

INSTRUCTIONS:
1. Cook bacon in large skillet over medium heat. While bacon is cooking, crack eggs into a bowl and whisk until smooth. When bacon is finished, wipe out grease and pour eggs into the skillet, season with salt and pepper, and scamble until cooked. Chop bacon. 
2. Cover one flour tortilla with a thin layer of cheese. Top with some of the scrambled eggs and some chopped bacon. Top with some more shredded cheese and place another flour tortilla on top. 
3. Carefully set the quesadilla into the pan over medium heat. Cook until the cheese begins to slightly melt and the bottom tortilla is golden brown. Carefully flip to the other side and cook for 1-2 more minutes. 
4. Remove to a plate. Slice and serve warm with salsa, sour cream and guacamole, if desired. 

To Freeze: Prepare and cook the quesadillas as directed. Allow to cool completely and then place in a freezer Ziploc bag. When ready to eat, microwave them or place them on a hot skillet until warm.
